(Sort of) Minestrone Soup

Sort of made up this sort of minestrone soup a couple of months ago. It's so yummy I made a recipe. Super-healthy too.

All ingredients are approximate.

Ingredients
  • Split Peas x 1 cup
    Pasta x 250 g
    Stock x 2L
    Raw sugar x 2 tablespoons
    Onion x 1, finely diced
    Tomatoes x 1 kg, chopped
    Celery x ½, sliced 5-10 mm thick
    Fennel bulb x 1, sliced 5 mm thick
    Cabbage x ½, shredded
    Cracked black pepper and salt
    Parmesan, grated (optional)
    Lemon (optional)

Method
  • Boil split peas in 2-3 cups of salted water for about 20 minutes (until soft but with a bit of bite). Set aside.
    Boil pasta in salted water. Set aside.
    Add sugar to stock and boil stock.
    Add onion and tomatoes to stock, cook for 10 minutes.
    Add celery and fennel to stock, cook for 10 minutes.
    Add cabbage to stock, cook for 5 minutes (or until just tender).
    Season with pepper and salt to taste.
    Serve with grated parmesan and squeeze of lemon juice.

For sure. Or you could chuck in the rind from a piece of Parmigiano Reggiano or Grana Padano like the Italians do.
